Considered one of the most popular dishes in the country, its origin stories appear to have been birthed through the time of colonization. <\/span><a href=\"https:\/\/www.chilecooks.cl\/2017\/05\/pastel-de-choclo\/\"><span style=\"font-weight: 400;\">According to Sonia Montecino<\/span><\/a><span style=\"font-weight: 400;\">, the Chilean author and anthropologist, the foundational aspect of the dish \u2013 the <\/span><i><span style=\"font-weight: 400;\">picadillo (meat stew)<\/span><\/i><span style=\"font-weight: 400;\"> \u2013 comes from the Spanish conquerors and was combined with the traditional corn paste of Chile. She surmises that the fusion came during the time that the<\/span><i><span style=\"font-weight: 400;\"> Mapuche<\/span><\/i><span style=\"font-weight: 400;\"> were forced to work in the kitchens of the Spanish. <\/span><\/p>\n\n<p><span style=\"font-weight: 400;\">While oftentimes our traditional dishes seem to have origin stories in violent pasts, such as <\/span><i><span style=\"font-weight: 400;\">pastel de choclo<\/span><\/i><span style=\"font-weight: 400;\">, the recipes are a way to carry the timeline of history through the dish.
